Surprise AZ Trip

Last week I decided that Leo and I would head down to AZ for a week. It was kind of last minute and we didn't tell anyone we were coming except for my parents. It was really fun to show up on people's door steps and see their reactions. I ended up not taking many pictures, but here's what I do have.
Both of our flights were really early in the morning. Leo spent the entire trip down to AZ staring out the window like this. He was quite fascinated by the whole flying process. (Which is a little funny because it was his sixth or seventh time on an airplane.) We ended up having the entire row to ourselves on both flight which made the trip so much easier!


Leo loved having cousins around to play with. One day I came to pick him up and found that he's been in the dirt pile learning (from his cousins, of course) how to throw dirt. I don't think he's ever been so dirty in his life! He sure was having fun though.


This is Leo eating frozen yogurt at grandma and papa Reber's house.


And this is Gage. He was born on the 15th and is the main reason we went down. It was so much fun to be able to see and hold him. We're glad he came on time so we could meet him!

Another Recipe

Spaghetti Carbonara

Ingredients:

-1 lb. spaghetti

-1/2 large onion, diced

-1/2 pound turkey bacon (or the real thing), diced

-5 eggs

-1/4 cup milk

-1/4 cup parmesan

-1 tsp freshly ground black pepper

-olive oil


Method:

Bring a big pot of salted water to a boil on the stove. (Use about 2 Tbs. salt - this is the secret to flavorful Italian pasta!)

While waiting for the water to boil, heat 1 Tbs. oil in a large skillet over medium heat. Add the turkey bacon and cook until it is nearly crispy, stirring every few minutes. (If using real bacon you don't need to use oil and may actually need to drain some of the grease before the next step.) Then add the diced onion and continue cooking until the bacon is crispy and the onion is translucent.

In a small bowl whisk together eggs, milk, parmesan and black pepper until well blended. Set aside.

Once the pasta water is ready, add the spaghetti and cook according to package instructions until it is al dente. (Usually about 9-11 minutes.)

When the pasta is ready, carefully and quickly drain out the pasta water, and return pasta to the hot pot immediately. Then, while stirring the pasta with one hand, use the other to pour the egg mixture into the pasta and continue to toss until the egg mixture is cooked into the pasta. (You may see a few tiny clumps, but in general the eggs will just coat the individual pieces almost like a sauce.

Finally, add the bacon and onion mixture and toss until well mixed.


After he woke up from his nap Leo was throwing the hugest, stinking fit for no apparent reason. Ty threw him into his clothes hamper. . . and Leo LOVED it. What a weirdo!

Okay, so I was just putting Leo down for his nap. He was laying on my stomach and Jay Alvin started kicking him. Leo shifted a little, got kicked, shifted some more, got kicked, and finally sat up, looked at my belly like, "What the crap?" poked it pretty hard and laid back down. No more kicking. I guess Jay Alvin knows who's boss. :)

"Touch"

One of Leo's favorite words (and the one he says most clearly) is "touch." He says it when he wants us to lift him up so he can touch the ceiling. Here's a few pictures.

Lego's

Grandma and Grandpa Reber sent Leo some Lego's for Christmas. He hasn't quite figured out how to put them together yet, but he sure loves tearing them apart. And he especially likes knocking down Lego towers. This is a common scene at our house these days:

I can't even put towers together fast enough for him. He literally pulls them out of my hands and sets them up so he can knock them down.

Best Day Ever

So, today was the best day ever.
Why?
Leo went to nursery for the first time and he loved it!
We walked him into the nursery room, he jumped down out of my arms and never looked back. When we went to pick him up 2 hours later he didn't even acknowledge our presence and he sure didn't want to leave. All during Sunday school and Relief Society this song kept running through my head:

I can finally enjoy church again, and that makes me very
happy. :)

P.S. I have a lot more to update on, but it's not going to
happen tonight.
